Mush Mór Exotic Mushroom Risotto

Mush Mór Exotic Mushroom Risotto

(Serves 4)

Ingredients:

  • 1 cup Arborio rice

  • 1 tablespoon olive oil or butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup sliced fresh mushrooms (your choice)

  • 1 tablespoon Mush Mór Original mushroom powder

  • 4 cups vegetable or chicken stock, kept warm

  • 1/2 cup white wine (optional)

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

  1. Sauté Aromatics:

    • Heat olive oil or butter in a large pan over medium heat

    • Add the chopped onion and sauté until translucent

    • Add minced garlic and cook until fragrant

  2. Add Mushrooms:

    • Add the sliced fresh mushrooms and cook until they start to soften

  3. Toast Rice:

    • Stir in the Arborio rice and cook for 1-2 minutes until it becomes slightly translucent around the edges

  4. Add Wine (Optional):

    • Pour in the white wine and cook until it’s mostly absorbed by the rice

  5. Add Mushroom Powder:

    • Sprinkle in 1 tablespoon of Mush Mór Original mushroom powder and mix well

  6. Cook Risotto:

    • Add a ladleful of warm stock to the rice and stir continuously until absorbed

    • Continue adding stock, one ladleful at a time, stirring constantly, until the rice is creamy and cooked through (about 18-20 minutes)

  7. Finish and Serve:

    • Stir in the grated Parmesan cheese

    • Season with salt and pepper to taste

    • Garnish with fresh parsley if desired
