Mush Mór Creamy Exotic Mushroom Soup

(Serves 4)

Ingredients:

  • 2 tablespoons of butter or olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 240 g sliced fresh mushrooms (shiitake, oyster, or your choice)

  • 2 tablespoons Mush Mór Original mushroom powder

  • 1 tablespoon plain flour

  • 900 ml vegetable or chicken stock

  • 240 ml milk or cream

  • Salt and pepper to taste

  • 1 tablespoon soy sauce (optional)

  • Fresh parsley or chives for garnish

1. Sauté the Aromatics:

  • In a large pot, heat the butter or olive oil over medium heat

  • Add the chopped onion and sauté until translucent, about 5 minutes

  • Add the minced garlic and Mush Mór Original mushroom powder, sauté for another minute until fragrant

2. Add Sliced Mushrooms:

  • Add sliced mushrooms of your choice (preferably exotic) to the pot

  • Cook for about 5 minutes until the mushrooms start to soften

3. Create the Base:

  • Stir in the flour and cook for 1-2 minutes, stirring constantly to avoid burning. (Make sure there’s enough oil/butter to coat the grains of flour)

  • Gradually add the stock, whisking continuously to prevent lumps

  • Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavours to meld

4. Finish the Soup:

  • Stir in the milk or cream and soy sauce (if using)

  • Season with salt and pepper to taste

  • Heat the soup until it is just warmed through, but do not let it boil

  • Blend (Optional)

6. Serve:

  • Ladle the soup into bowls

  • Garnish with fresh parsley or chives

Tips:

  • Add a splash of white wine after adding the garlic and mushroom powder for an added depth of flavour

  • If you prefer a thicker soup, add a bit more flour or reduce the amount of stock
