Mush Mór Creamy Exotic Mushroom Soup
(Serves 4)
Ingredients:
2 tablespoons of butter or olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
240 g sliced fresh mushrooms (shiitake, oyster, or your choice)
2 tablespoons Mush Mór Original mushroom powder
1 tablespoon plain flour
900 ml vegetable or chicken stock
240 ml milk or cream
Salt and pepper to taste
1 tablespoon soy sauce (optional)
Fresh parsley or chives for garnish
1. Sauté the Aromatics:
In a large pot, heat the butter or olive oil over medium heat
Add the chopped onion and sauté until translucent, about 5 minutes
Add the minced garlic and Mush Mór Original mushroom powder, sauté for another minute until fragrant
2. Add Sliced Mushrooms:
Add sliced mushrooms of your choice (preferably exotic) to the pot
Cook for about 5 minutes until the mushrooms start to soften
3. Create the Base:
Stir in the flour and cook for 1-2 minutes, stirring constantly to avoid burning. (Make sure there’s enough oil/butter to coat the grains of flour)
Gradually add the stock, whisking continuously to prevent lumps
Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavours to meld
4. Finish the Soup:
Stir in the milk or cream and soy sauce (if using)
Season with salt and pepper to taste
Heat the soup until it is just warmed through, but do not let it boil
Blend (Optional)
6. Serve:
Ladle the soup into bowls
Garnish with fresh parsley or chives
Tips:
Add a splash of white wine after adding the garlic and mushroom powder for an added depth of flavour
If you prefer a thicker soup, add a bit more flour or reduce the amount of stock
