Mush Mór Exotic Mushroom Vegetable Rice

(Serves 4)

Ingredients:

  • 1 cup basmati or long-grain rice

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup mixed vegetables (e.g., carrots, peas, bell peppers, broccoli)

  • 1 tablespoon Mush Mór Original mushroom powder

  • 2 cups vegetable stock or water

  • Salt and pepper to taste

  • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare Rice:

    • Rinse the rice under cold water until the water runs clear

  2. Sauté Aromatics:

    • Heat olive oil in a large pan over medium heat

    • Add chopped onion and sauté until translucent

    • Add minced garlic and cook until fragrant

  3. Add Vegetables:

    • Stir in the mixed vegetables and cook for 3-4 minutes until they begin to soften

  4. Add Rice and Mushroom Powder:

    • Add the rice and 1 tablespoon of Mush Mór Original mushroom powder to the pan, stirring to coat the rice with oil and mushroom powder

  5. Cook Rice:

    • Pour in the vegetable stock or water, bring to a boil, then reduce the heat to low

    • Cover and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed

  6. Season and Serve:

    • Fluff the rice with a fork and season with salt and pepper to taste

    • Garnish with fresh herbs if desired
