Mush Mór Exotic Mushroom Vegetable Rice
(Serves 4)
Ingredients:
1 cup basmati or long-grain rice
2 tablespoons olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup mixed vegetables (e.g., carrots, peas, bell peppers, broccoli)
1 tablespoon Mush Mór Original mushroom powder
2 cups vegetable stock or water
Salt and pepper to taste
Fresh herbs for garnish (optional)
Instructions:
Prepare Rice:
Rinse the rice under cold water until the water runs clear
Sauté Aromatics:
Heat olive oil in a large pan over medium heat
Add chopped onion and sauté until translucent
Add minced garlic and cook until fragrant
Add Vegetables:
Stir in the mixed vegetables and cook for 3-4 minutes until they begin to soften
Add Rice and Mushroom Powder:
Add the rice and 1 tablespoon of Mush Mór Original mushroom powder to the pan, stirring to coat the rice with oil and mushroom powder
Cook Rice:
Pour in the vegetable stock or water, bring to a boil, then reduce the heat to low
Cover and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed
Season and Serve:
Fluff the rice with a fork and season with salt and pepper to taste
Garnish with fresh herbs if desired
